Our Chardonnay is gently harvested and whole-cluster pressed resulting in wines with supple texture. After pressing, the wine undergoes 100% barrel fermentation using native and cultured yeast strains. Complete malolactic fermentation follows with weekly
stirrings. These processes add creamy, vanilla and toasty notes to the wine. This Chardonnay is then barrel aged sur lie for ten months in small French oak casks.
