Carmel Road Pinot Noir is harvested with great care to minimize the handling of the fruit. We gently destem each cluster then cold soak the grapes for several days to help develop red fruit flavors, extract color and minimize tannins. Next, we ferment in small vessels using both natural and cultured yeasts. After primary fermentation, the wine is stored in French oak barrels for seven months. Finally, the lots are blended and the wine is bottled without fining, preserving every nuance of Pinot Noir character.
