Ivan’s winemaking philosophy at Carmel Road is to handle the fruit as gently as possible. This is critical when working with finicky Pinot, which demands special attention. First, the clusters are carefully de-stemmed, then cold-soaked for several days to allow the subtle fruit flavors to emerge while extracting excess color and tannins. The wine is initially fermented in small vessels and later transferred to French oak barrels for several months. Finally, the separate lots are combined to create a superb blend, resulting in a subtle and sophisticated Pinot Noir. The wine is bottled without
fining in order to preserve every aspect of its character.
